INSTRUCTIONS

1. In a skillet, toast the cloves, peppercorns, fennel seeds, and carom seeds.
2. In a mixing bowl, combine all spices and other ingredients and ground to a fine powder.
3. After you've sieved all of the powder, set it aside.
4. With the use of a hand blender, combine the water and oil until they are evenly distributed.
5. Now add fresh lemon juice, 2 & 1/2 tbsp masala powder, and soda, and blend for another minute.
6. To form a soft dough, combine the above ingredients with the cooked gram flour.
7. Use oil to grease your hands, the sev mould, and the dough. In a medium-sized sev maker with a net, place the dough.
8. To cook sev, heat oil in a deep pan and press the mould over the pan.
9. Turn the dough over and cook on the other side until golden in colour, or until bubbles appear on the surface of the oil.
10. Place the sev on a paper towel to absorb any excess oil and keep it crisp.
11. To make little bits, crumble it..
