Duniya mein corn ki hazaron recipes hain. Popcorn, corn soup, cornbread, sweet corn chaat. Par grated corn ko ghee mein bhunna, usme doodh daalna, jeeravan se sazaana — aur fir usse ek khaas mitti ke pyale mein garma-garam dena — yeh sirf Indore jaanta hai. Aur yeh sirf Indore karta hai.
Mujhe yaad hai jab main bahut chhoti thi — shayad paanch-chhe saal — toh Sarafa mein ek stall hoti thi. Baarish ho rahi hoti, raat ka waqt, aur woh bhai sahab ek bade tave pe kuch pakaa rahe hote. Woh khushbu — ghee, hari mirch, bhune hue makke ki — aaj bhi mere dimag mein itni taza hai jaise kal ki baat ho. Woh bhutte ka kees tha. Woh khushbu Indore ki hai. Aur woh sirf Indore ki hai.
Pehle — Naam Ka Matlab Samjho
“Bhutta” — Hindi mein makka, corn.
“Kees” — Marathi shabd, matlab “grated” — kadukaasha hua. Toh Bhutte Ka Kees ka literal matlab hai: grated corn dish. Simple naam, kamaal ka dish. Yeh Malwa aur Rajasthani cuisine ka hissa bhi hai — par Indore ne ise apna banaya, apne hisaab se pakaya, aur duniya ko diya. Yeh dish no onion, no garlic hai. Isliye Sarafa mein yeh sabse zyada bikta hai — koi na koi isko khaa sakta hai.

- Haldi, dhaniya powder, lal mirch powder
- Besan (bhuna hua) — 2 tbsp
- Doodh — 1/2 cup
- Nimbu, hari dhaniya, fresh nariyal — garnish
- Jeeravan masala — last mein — yeh woh cheez hai jo ghar wale aur restaurant ka fark batata hai
Banana Kaise Hai
Bhuttay ko kadukas pe kadukasna — tez haath chahiye. Woh milky juice jo grater pe nikalta hai — usse discard mat karna, woh creamy texture ka secret hai. Ghee garma karo, rai-jeera crackling karne do, hing-mirch-adrak daalo. Kadukasha bhutta daalo, halki aanch pe pakao, doodh daalo, dhak do. Jab thick ho jaaye — nimbu, dhaniya, nariyal, aur last mein jeeravan. Garma-garam serve karo — immediately. Thanda kees kees nahi rehta.
Sarafa Mein Kees — Woh Experience Jo Ghar Se Alag Hai
Ghar ka kees aur Sarafa ka kees — dono same recipe hain. Par experience bilkul alag hai. Sarafa mein raat ko 9 PM ke baad jaao. Ek chote se earthen pot mein garma-garam kees, opar se fresh coconut ka garnish, green chutney side mein, aur background mein poore Sarafa ki sound — jalebi talne ki awaaz, pani puri plates ki khanak, logon ki hansi.
